Here is a shot showing how I use little mirrors to backlight and highlight some of the edges on food shots.   You can have a light designated to just bounce off mirrors, this light does not even need to be directly hitting the set.   This is a super awesome way to add light sources to your set without adding tons of lights..   you can also flag the mirrors with tape to control it even more.
